1 banana, peeled
1 cup oat flour
2/3 cup rolled oats
3 tablespoons of peanut butter
1 egg, beaten
Preheat oven to 300 degrees
Put banana in a large bowl, use a spoon to smash thoroughly. Add the oat flour, oats, peanut butter, and egg. Stir well and set aside for 5 minutes.
Roll out the mixture and use a cookie cutter to cut out shapes. Use extra oat flour to keep from sticking. You can also do spoon drop cookies instead.
Transfer to a large parchment paper-lined baking sheet.
Bake until firm and a deep golden brown on the bottom, 40-45 minutes
Set aside to cool completely.
