Chef Charlie's Pumpkin Gingerbread Dog Cookies

Ingredients:

2 cups whole wheat flour, plus extra for rolling
1 cup pumpkin
1 egg
2 tbsp. molasses
1  1/2 tsp ginger
1 1/2 tsp CEYLON cinnamon (do NOT use Cassia cinnamon)

Directions:

Preheat oven to 350 degrees
Mix all ingredients, add more flour if necessary so the dough isn't sticky
Roll out the dough on parchment paper
Cut into your favorite shapes
Transfer to baking sheet and bake for 40 minutes, flipping halfway through
Store in an airtight container
